Soup season has officially arrived! We always find that a big bowl of soup not only warms us up, but also gives us our much needed seasonal veg at this time of year.
Personalised Vintage Soup Spoon
So today we want to share a warming soup recipe that we love to make at this time of year. It uses sweet potato, squash and a sweet ingredient that might surprise you!
Serves 4
- 500g Sweet Potato (peeled and cut into chunks)
- 250g Butternut Squash (peel and cut into chunks)
- 1 onion (finely chopped)
- 2 tbsp Olive Oil
- 1 Garlic clove
- 1 litre of Vegetable stock
- 1 tbsp Maple syrup
- 1 tsp of Nutmeg
Add the sweet potato, butternut squash and oil in a roasting dish. Roast for 20 minutes in the oven at 200 degrees celcius.
Fry the onion and garlic in a saucepan until browned. Add the vegetable stock, roasted sweet potato and butternut squash and simmer for a further 15 minutes.
Allow to cool slightly and blend the soup until smooth. During the blending process, add the maple syrup and nutmeg to add that sweet kick.
Finish with croutons or crusty bread and enjoy!
